Jenny's Favourite Marrow Recipe: Perfect for Weekly Meal Prep
For those of you who are new here, Daniel and I are dedicated to keeping our bodies healthy with good food and exercise, training up to six times per week. To keep up with our busy lives while running our business, we prepare a weekly meal prep for the following week. This recipe is the perfect option for weekly meal prep as it is easy, fast, delicious, and healthy.
We always have some damaged veggies that we can't sell, so we love creating recipes that allow us to use them. That's why this recipe doesn't provide exact measurements, but rather an idea of what to do. We usually use the following ingredients:
- Marrow (as many as will fit in our oven)
- Peppers (any colour)
- Carrots
- Onion (either red or white, whichever is available)
- Garlic (we love garlic and put a good amount in)
- Any type of tomato sauce or curry paste
- Mince meat (we mostly use a mix of lamb and beef, but tofu would work just as well)
- Spices, which ever we fancy
We also like to add:
- Beetroot
- Kohlrabi
- Tomatoes
- Mushrooms
You can use any vegetable, spices or sauce you prefer.
Method
- Preheat the oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan (we end up using 2-3 frying pans) and cook the onion, garlic, peppers, and any other veggies you choose until they are starting to soften. Add your choice of spices and the mince meat or tofu and brown all over, then add your choice of tomato sauce and cook for 5 more minutes.
- While the frying pan is doing its job, cut the marrow in half, scoop out the middle of the marrow, and add it to the frying pan.
- Once you're done with the frying pan, spoon the mix into the middle of each marrow slice, then spoon the rest over the top.
- Cover with foil and bake for around 30 minutes.
- Serve with your choice of side dish. We like to have rice or giant couscous with it.
