Fruit Crumble by Daniel
Description:
This simple crumble recipe works with any fruit for the base and many different combinations of ingredients for the topping.
I like to create a combination of complementary flavours, if I'm using sour fruit i make the crumble topping sweet, if the fruit is sweet then i like a plain buttery topping, if I'm using a plain fruit then i like to use muesli in the crumble topping to add more flavour to the crumble.
I don't bother too much with precise measurements instead preferring to use my trays to measure.
Ingredients:
Tray full of chosen diced fruit (leaving space for the topping)
Wine, Cider or Fruit Juice
Flour (i use white, but you can use wholemeal, this also works with GF flour as well, i recommend rice flour)
Oats, muesli or other cereal of your choice (believe it or not any cereal works, it helps with the texture and add complementary flavour)
Sugar, Honey or Syrup
Butter or Vegan spread
TIP - i haven't put measurements for the flour and cereal because the amount you need will depend on the size of the tray you are using, what i do is take the empty tray i plan to use to make the crumble and poor the flour and cereal into the bottom of it till i have the thickness of topping i want on my crumble as an even layer across the bottom of the tray. i then tip this out into a mixing bowl ready to add the butter and sugar.
Method:
Take the fruit and dice it into the tray with a small splash of the wine, Cider or fruit juice and place in the oven at 180 to start cooking.
While the fruit is in the oven take the bowl of flour and cereal and the butter or vegan spread, (start off with half a pack and add more as needed) and mix with your hands it takes on a bread crumb texture then add the Sugar, Honey or syrup and mix thoroughly (you start with a small amount and add till the topping has reached the desired sweetness).
Make sure to check on the fruit and stir as necessary.
By the time the crumble topping is made the fruit should hopefully have softened to the degree you wish it, if its not don't worry just sit back and enjoy the rest of the wine or Cider =)
When the fruit is ready sprinkle the topping carefully on top and spread evenly.
Then Place the tray back into the oven and bake till the topping is golden.
