Wedding Dish recipe

Ingredients:
1x leek
1x bunch spring onion
1x lettuce
1x bunch chard
1x bunch spinach
1x bunch parsley
1x bunch coriander
500g Mixed Nuts
24 Eggs

Serve with:
Plain Yoghurt
Pitta Bread or wraps

Method:
Finely dice all the ingredients except the eggs and mix them thoroughly together and place into a large tray, then compress them down as tightly as possible, i use a smaller tray to help achieve this.
Then crack the eggs into a large bowl and whisk them, add salt and pepper, then tip the eggs into the tray with the veg, cover with foil and bake at 160 degrees till egg is cooked solid, approximately 90 minutes, near the end take the foil off and let the top lightly brown.
