BBQ Chicken and Mango Quesadillas
6 small tortillas
2 cups of chicken (shredded)
2 cups of cheddar cheese (grated)
1 mango (peeled and sliced)
BBQ sauce
Fresh coriander
Tbs of butter
In a pan melt some of the butter at medium heat, and add a tortilla. Put a third of the chicken, cheese, and mango slices on top of the tortilla. Add coriander and BBQ sauce. Place the second tortilla on top. When the bottom tortilla is golden brown carefully flip it over until the bottom is golden and the cheese is melty.
Repeat with remaining ingredients.
Serve with Trinity Farm salad or some potato wedges.
